You schedule a two-week absence. The business runs on the systems we built. If anything breaks for a system-controllable reason, we return and fix it.

Every Build has one defined, observable test inside 60 days of handoff. For the Operations Build, that's your operations running for two weeks without you. If the system fails it, we come back and rebuild, no second invoice.
